The Importance of Antioxidants

It has only been since the latter half of the 20th century that we have truly begun to understand the importance of antioxidants in maintaining a healthy balance in our bodies, and really only in the last ten or twenty years that the public has really begun to understand this.  By fighting rapid increases of free radicals in our systems, antioxidants keep our systems balanced.  Unlike free radicals, they are not produced by the body.  Food high in antioxidants can be very helpful in keeping us healthy.

In 2004, the Journal of Agriculture and Food Chemistry created a list showing the top twenty foods high in antioxidants.  One of the co-creators of this list was Richard L. Prior, a nutritionist for the USDA (United States Department of Agriculture)
